Editors -- ssh & vi might be texty but nothing stopping gedit or kedit 
or even windoz whatever.

Probably the ONLY reason to choose a headless server is to permit the 
desktop to be shut down for other reasons while jnos continues to guard 
the RF. Isn't "play freely" the general approach to a high power desktop 
while remote headless low power 24/7 is the reason you have a server in 
the first place -- say for desktop backup to the remote HD? If your 
thought is that a remote host requires that ol' black text screen with $ 
and # and ascii text, then part of the fun in *nix is having your GUI 
cake and unplugging your desktop too.
