Same reason that some "warehouse" stores keep their aisles too crowded to walk
in. That's part of the psychology of design, and when you are dealing with
things in print?

<<Graphic artists make things beautiful, functionality (as in how the
information is organized and presented) comes from elsewhere.>>

Ouch! I'm sure you didn't mean that nasty slam, but graphic artists are *not*
beauticians, they are often extensively trained in the psychology of design and
how to make it more effective. Like why printing a bi-lingual business card
"must" be done one way on Quebec (French over English, on the same side) and
another way in Japan (each language on one side only).
Or more typically, how to put the instructions on your can of paint or
insecticide, in such a way that you can easily read them without having to rock
the can back and forth on every line. And conversely, how to print a commodity
brokerage contract that meets SEC regulations but still is totally illegible.

Graphic art has nothing to do with drawing pretty puppy dogs on matchbooks, it
is production work more so than "Art" with a capital "A". When done at it's
best, it is both artful and invisibly informative. From Wikipedia: "Graphic
design is the applied art of arranging image and text to communicate a message."

Pretty much like ham radio--a communication skill, not just a technical one.<G>
