Exactly what does "APRS updates" mean? I suspect it means
operating as a stand-alone tracker, rather than as a modem for a
computer.

The original query referred to using the SCS device with
UIview. In what capacity?
As a basic APRS send/receive mapping and messaging client? As
an igate? As a digipeater?

To function as a UIview digipeater, the TNC/modem device must be
placed into KISS mode rather than traditional TNC command-line
mode.

The question is: Can the SCS device be placed into KISS mode for
operating packet, in a manner similar to other TNCs such as TNC-2s
or KPC3s
?

In any case, since there won't be a TNC initialization file for the
SCS included with UIview, be prepared for lengthy experimentation
modifying one of the existing TNC init files to make the SCS unit
start up correctly.

Bear in mind that the main UIview program
has now remained unchanged for OVER A DECADE. It
is an "orphan" frozen in time as of 14 April 2004 during the
"Windows XP era". As a result, no hardware support for TNC
devices released later than about 2003 exists -- you are on your
own to develop the TNC init files required.
